Fast Meal: Chicken and Strawberry Salad

Jen has talked about this before - the secret to a fast meal? Rotisserie Chicken, yo. Pick up a rotisserie chicken (I recommend Costco's - they are cheaper and higher quality than the regular grocery store ones), bring it home and pull off the skin and break apart the meat and store in the fridge for a few meals that week.

This salad is so yummy, a cinch to prepare, and perfect for spring and summer!

Chicken and Strawberry Salad from Pojo


Dressing:
  • 1 tablespoon sugar
  • 2 tablespoons red wine vinegar
  • 1 tablespoon water
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • Salad:
  • 4 cups torn romaine lettuce
  • 4 cups arugula
  • 2 cups quartered strawberries
  • 1/3 cup vertically sliced red onion
  • 12 ounces skinless, boneless rotisserie chicken breast, sliced
  • 2 tablespoons unsalted cashews, halved
  • 1/2 cup (2 ounces) crumbled blue cheese

*Note: I used a spring mix instead of the romaine and argula and no onion and it turned out great!

Combine dressing ingredients and whisk. Toss all salad ingredients together and then drizzle dressing over and toss again. Serve with toasted, buttered baguettes with cheese.


Slice baguettes and lightly butter. Arrange on baking sheet. Sprinkle lightly with cheese (you just want a hint of cheese taste). Bake at 400 degrees for 3-4 minutes, then turn broiler on low and toast for another minute or two until the cheese is almost crisp. The baguettes should still be soft, yet crunchy.
