MSo I made this last night for the first time and it was pretty good. Nothing too exciting, just another chicken over rice dish you can try. One bonus is you probably already have everything you need. Also, I halfed the recipe and it was more than enough for Tom and me.
Ingredients:
4 cups Chicken Breast, cooked and cubed
2 cups Ham Chunks
2 cans Cream of Chicken Soup
1.5 cups Monterey Jack Cheese, grated
8 oz Light Sour Cream (1 cup)
Bread Crumbs
Mix all together. Bake at 350 degrees until bubbly. Top with some bread crumbs. Bake an additional 5 minutes and serve over rice.
Also, we tried Briana's Raspberry Chicken and it was pretty dang good! I'll be making it again for sure. I'm making Julie's cake rolls as we speak. I'm excited!

Muddy Buddies.
The recipe is on the back of most Chex cereal boxes. I'm too lazy to write it out, but it's way good. I'm making them tonight to take to my co-workers at Westside.
Spaghetti and Meatballs
We just had our ward Christmas party, and they served us spaghetti and meatballs that tasted sooo good! So, I asked what they used and here is the secret!
You buy italian meatballs from Costco! (You could even go in on it with someone else if you wanted, because there are a TON of them!) You put the meatballs, 1 cube of butter (I'm actually only putting 2 tbls in), and 1 jar of any sauce you want, (I'm using Prego!) , into the crockpot! You let it cook as long as you want during the day. The lady who told me about this said the longer the better, because then the seasoning from the meatballs gets into the sauce. You can do it on high if needed, or low if it will be in there awhile. She said plan on about 4 meatballs for each person. I'm making it today, so I'll let you know how it goes! I'm so excited for an easy, yummy, sauce recipe! (I didn't think spaghetti could get any easier and taste so good!)

Enchiladas
Okay, so I never was the biggest fan of enchiladas, until I found this recipe! We like it, and Parker will even eat it! Hope you enjoy too!
Enchiladas
1 can enchilada sauce (we don't like it real spicy, so I get the Old El Paso- mild kind!)
Shredded chicken or ground beef cooked
Monteray Jack cheese, grated
Cheddar cheese, grated
corn tortillas
rice, cooked
We don't eat a whole lot yet, so I only cook about 2 chicken breasts. I usually make about 8 enchiladas. All you do is mix half of the can of enchilada sauce with the chicken, and some cheese. Then you roll the mixture in the tortillas and place them in your dish. Pour the rest of the enchilada sauce over the top, and sprinkle more cheese on top! Cook for half an hour on 350. Serve over hot rice! Yummy!

Bread making discovery!
Okay, bread making here means Rhodes rolls:) Today my rolls were not raising. Our house is too cold. Not well insulated. So I put them in the warmest room with the door closed. Where is this? Oh, the bathroom. That's right. Dinner rolls next to the bathroom sink:) It worked perfectly!

What do you think?
Okay, ladies, here's a recipe that Eric and I just found and tried last week. I thought it was yummy, but Eric wasn't a fan - which is really weird. Usually its the other way around. :) Although, he did say that his tummy was feeling funny that night, so maybe that was it?
Anyways, here's what I need you to do: if you feel so inclined, try out this recipe and see what you and yours think about it. Should we keep it and give it another try?
The handy thing about is that it is really fast to make and the ingredients are mostly all things you'd have on hand, except for maybe fresh raspberries.
Raspberry Glazed Chicken Breasts
1/2 cup raspberry jam
2 T dijon mustard
2 T honey
pepper and salt to taste
6 boneless, skinless chicken breasts
1 1/2 cups fresh raspberries (optional)
It is suggested that this recipe is grilled, but it was cold and we were lazy, so we just baked it in the oven. So, for starters:
Either prepare the grill or preheat the oven (about 400 degrees). Brush cooking surface with vegetable oil. Mix raspberry jam, mustard, honey, pepper, and salt. Place chicken on grill, cover and cook for 8-9 minutes per side, brushing frequently with the jam mixture. (Or if you're baking it, we baked it uncovered for about 20-30 mins). Discard remaining jam mixture and seve chicken topped with raspberries, if desired. Serves 6.

Here is another tasty treat... the much sought-after, slightly top secret recipe for Pumpkin Bread. :)
Pumpkin Bread
Yield: 2 large loaves, plus about half a dozen muffins
5 cups flour
4 1/2 cups sugar
3 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/2 tsp. salt
1 1/2 cup oil
6 eggs
1 cup water
1 29oz can of pumpkin
In a LARGE bowl, add first five ingredients and mix well. Make a well in the center of the mixture and then add liquid ingredients into well. Mix thoroughly. Grease loaf pans and fill 3/4 of the way full. Bake at 350 degrees for the following time(s):
Lg. loaves: 1 hr (I find that it always takes over an hour... just set your first timer for an hour to see how they are doing and check with a toothpick. Continue adding time until the toothpick does not come out wet.)
Sm. loaves: 1/2 hr (again, check it with a toothpick)
Lg. Muffins: 30-45 mins
Sm. muffins: 25-40 mins.
***The tops will crack.

Cake Balls
Ingredients:
1 baked chocolate cake
Medium tub of Cool Whip or Frosting (I prefer cool whip)
Chocolate bark (or any chocolate you can melt, but chocolate chips don't work very well)
Bake a chocolate cake and let it cool.
Once it's cool, crumble the cake into a large bowl.
Stir in Cool Whip.
Form into small round balls and put in the freezer for at least 30 minutes.
Melt chocolate.
Take the balls out of the freezer and dip them in the melted chocolate.
After covered in chocolate, place them back in the freezer.
They are such a good treat!

This is cookin' in my oven right now and is really good. I'm sure it'd be even better if you could grill the chicken.
Ingredients:
8 boneless skinless chicken thighs (you can use breasts but thighs are better)
2 T. vegetable oil
Rub:
2 t granulated garlic
2 t chilli powder
1/2 t onion powder
1/2 t coriander
1 t kosher salt (I use regular salt.)
1 t cumin
1/2 t chipotle chili powder
Glaze:
1/2 cup honey
1 T cider vinegar
Directions:
Combine the rub spices in bowl and mix well.
Drizzle oil over chicken and rub in with your hands to lightly coat all the pieces. Then toss chicken with the spice rub to coat all sides well. Use your hands and get in there! Grill chicken (I just bake it) a few minutes on each side, until cooked through.
While chicken is cooking, warm honey in the microwave so it's not so thick. Add the vinegar and combine well. Reserve 2 T honey glaze for later. Take the rest and brush on chicken (both sides) in the final moments of cooking.
Drizzle the extra glaze on top and serve.
Try it you guys! You won't be disappointed!

Saute onions in butter in large pot. Add soup (undiluted), and then cheese. Stir until it's cheese is melted. Add milk and whisk until smooth. Then add broccoli (just as much as you like- I used a package of frozen broccoli which I'd thawed). Serve with rolls or bread bowl!
I found this somewhere online and really liked it. Ryan not as much. It has a stronger onion flavor than other Broccoli Cheese Soups.

Ambrosia
You may already know this one, it's so easy! It's great as a side!
1 c Sour cream
1 c marshmellows
1 c coconut
1 can mandarin oranges
1 can pineapple
Mix together and chill. I usually go a little heavier on the fruit and marshmellows, and lighter on the other stuff. Enjoy!!
